A mess owner in Medavakkam once told us his idly batter had “gone wrong” for three weeks. Nothing had changed: same grinder, same urad, same water, same fermenting corner. What had changed was that his supplier had sent raw rice instead of idly rice because idly rice was short that week, and nobody mentioned it.

That is the whole problem in one story. Rice is not one product with a price. It is four or five different products that happen to look similar in a sack.

The first split: parboiled or raw

Before variety, before brand, before grade, there is one question: was the paddy parboiled?

Parboiled ricepuzhungal arisi — is soaked, steamed, and dried while still in the husk, then milled. The steaming gelatinises the starch inside the grain, which hardens it and pushes some of the B vitamins from the bran inward. The practical effects in a kitchen: the grains stay separate, they hold shape in a hot box for hours, and they break less during milling (IRRI Rice Knowledge Bank on milling).

Raw ricepachaarisi — skips all of that. Softer, cooks faster, sticks more, and turns to paste sooner if it sits.

If you serve meals, run a hot box, or hold rice through a lunch rush, parboiled is the default. If you are making a dish where softness is the point, raw is right.

Idly rice is a job, not a variety

“Idly rice” does not name a plant. It names a specific parboiled, short-to- medium grain milled for one purpose: batter that ferments well and gives volume. It absorbs water fast, grinds smooth, and holds air.

Then there is noi — broken rice, the fragments produced during milling. It is not a lower quality grain; it is the same grain in smaller pieces, sold cheaper because it cannot be presented whole. For batter, where everything gets ground anyway, that distinction stops mattering, which is why noi idly rice is one of the most quietly useful things in the catalog.

Broken rice is not bad rice. It is the same grain, priced for not being photogenic — and in a grinder, nothing you grind was ever going to be seen.


Ponni, sona masoori, seeraga samba: a different axis

Here is where most confusion sits. Ponni and sona masoori are varieties — different plants. Parboiled and raw are processes. You can have parboiled ponni and raw ponni. Asking for “ponni” without saying which one gets you whatever the mill happened to send.

  • Ponni — a Tamil Nadu variety, most often sold parboiled here. Medium grain, everyday meals rice.
  • Sona masoori — a lighter, smaller grain from the Andhra–Karnataka belt, usually sold raw. Popular where a softer, less heavy plate is wanted.
  • Seeraga samba — a small, aromatic Tamil variety named for its resemblance to cumin seed. It absorbs far more masala and water than its size suggests, which is exactly why Chettinad biryani uses it and why it costs multiples of everyday rice.

Basmati grade names, decoded

Basmati is sold under a stack of trade names — XXXL, XXL, XL, Dubar, Chappy — that look like official grades and are not. FSSAI’s basmati standard governs what may legally be called basmati; the length names on a bag are milling and trade conventions, and different mills apply them differently.

Broadly, they describe grain length after milling:

All of it comes off the same paddy. Broken basmati keeps the aroma and loses only the look — which is why it is the right buy for anything where the grain is mixed, ground, or not on display.

Write the processing on your order, not just the name

“50 kg parboiled” and “50 kg raw” are different orders. “50 kg rice” is an invitation for a substitution nobody tells you about.

Cook-test any substitute before it hits service

One kilo, your actual method, your actual hot box. Yield and hold time are what change, and both are invisible in the sack.

Move the invisible rice to broken grades

Batter, kanji, flour, staff meals, fried rice. If the grain is ground, mixed, or not on the plate whole, you are paying for looks you never use.

Cost seeraga samba per plate, not per kilo

What is the difference between idly rice and boiled rice?
Both are parboiled, but they are milled for different jobs. Idly rice is a short-to-medium parboiled grain selected for batter — it absorbs water quickly, grinds smooth, and holds air during fermentation. Boiled rice (puzhungal arisi) is a larger parboiled grain meant to be eaten whole; it stays separate and holds shape through a service.
Can I use raw rice instead of idly rice for batter?
You can, but the batter behaves differently — it ferments and rises differently and the idly texture changes. If a supplier substitutes raw for idly rice without telling you, that alone is enough to make three weeks of batter 'go wrong' with nothing else changed.
Is parboiled rice healthier than raw rice?
Parboiling drives some B vitamins and minerals from the bran into the grain before the bran is milled off, so parboiled rice retains more of them than raw milled rice. It also has a firmer texture. Whether that matters for your menu is a separate question from what it does in the pot.
What is noi rice and is it lower quality?
Noi is broken rice — fragments created during milling. It is the same grain, not a lesser one, sold cheaper because it cannot be presented whole. For batter, kanji, flour, and anything ground or mixed, it does the same job for less.
What do XXXL, Dubar and Chappy mean on a basmati bag?
They are trade names for grain length after milling, not official grades. XXXL and XXL are full-length head grain; Dubar is roughly half to three-quarter length; Chappy and Mogra are the smallest broken grades. All come from the same basmati paddy and keep the aroma — only the appearance changes. FSSAI regulates what may be sold as basmati; the length names are mill conventions.
Why is seeraga samba so much more expensive?
It is a low-yield aromatic Tamil variety, so the paddy itself costs more. Per plate the gap narrows, because seeraga samba swells more and carries more masala than basmati, so a biryani uses less rice by weight. Current rates for everything mentioned here are on today's price list.
